Shrimp Avocado and Garlic Noodles
Ingredients Used
- De-veined Shrimp
- Rice Noodles/or of your preference
- Avocado
- Garlic
- Soy Sauce
- Ginger Paste
- Spinach
Method
- Boil the noodles first, strain and keep aside
- Now heat a wok and shallow fry the shrimps in a table spoon of olive oil
- Add ginger paste, finely chopped garlic, black paper and salt as per taste and transfer it on a plate
- Now in the same wok add 2 more table spoon of olive oil
- Add finely chopped ginger, garlic and spinach and give it a light toss
- After 1 minute add the noodles, soya sauce, rice vinegar and toss well unless everything is finely coated. Taste the salt & pepper if required
- At this point add the shallow fried shrimps and add diced avocados and again give a gentle mix. Make sure the avocados don’t break or become too mushy!!

Avocado Chicken Sandwich
Ingredients Used
- Bread
- Shredded chicken
- Avocado
Method
- For the filling, boil chicken and then shred it. Add salt & pepper to the shredded chicken as per taste, soy sauce, chili sauce, ginger garlic powder and tomato sauce. Mix well and keep aside.
- Mash avocados and season it with olive oil, salt & pepper. Mix well and keep aside
How to Prepare
- Heat a pan. Add small portion of butter(or lot more, won’t hurt for a day 🙂 ) and toast the breads on both side until little crisp and golden. Transfer them in a chopping board.
- Now add a layer of the mashed avocados and top it with the chicken mixture. Layer it with one more bread on the top making it a sandwich.
- With the help of a sharp knife, diagonally cut into pieces.
Serve hot with tomato ketch up.
Chicken Breast and Guacamole
Ingredients Used
- Chicken Breast
- Avocado
- Cucumber
- Carrot
- Tomatoes
- Lettuce
- Onions
- Parsley/Coriander/Mint
- Legumes
Note: Soak the legumes overnight(any of your choice). I used chick pea, kidney beans and pigeon pea. Boil the legumes with bit of salt in pressure cooker up to 2 vessels and depending
Method
- Marinate the chicken breast with yogurt, ginger garlic paste, salt & pepper and mixed herbs and let it rest for 20mins
- Grill the chicken on a grill pan until cooked from both side
- Now mash avocado, add olive oil, salt & pepper, finely chopped onions and finely chopped parsley/coriander/mint and mix everything really well
- Your Guacamole is ready!! The name is heavy but it’s that simple
How to Prepare
- In a mixing bowl add the boil legumes, chopped cucumber, grated carrot, chopped tomatoes, lettuce of your choice and mix well. Now add olive oil, salt & pepper or any dressing of your choice. I used lemon juice and honey.
- Now add the prepared Guacamole in the salad and give it a gentle toss
- Plate the chicken breast and serve the salad mixture on the side
Tips: It tastes even better when the salad is served cold with hot chicken breast.
